For dinner tonight we're eating one of Nichole's favorites.
Mahi, locally known as Mahi-Mahi, is another fish thats very common in Hawaii. Rolled in a macadamia nut and Panko breading, browned in butter and olive oil, finished in the oven, and drizzled with a sweet spicy mango sauce, just about any good quality fish is going to taste great. You can also use other fish such as Halibut, Sea Bass, and even Talapia. It also goes really great with Salmon.

I'm pretty sure everyone knows what Hummus is, but in case you don't...
Hummus is a Middle Eastern dip or spread made from cooked chickpeas, or ganbanzo beans. But wait, is it a pea, or is it a bean?
The garbanzo beans are blended with tahini, olive oil, lemon juice, salt and garlic. It's a VERY popular food throughout the Middle East.

Those were my exact words when I first heard of this recipe after moving to Hawaii. Being a sushi lover, I was vaguely familiar with Miso soup, but Miso was only in soup right? Little did I know Miso goes way beyond that.
